Bio

Dr. Pignotti is a Registered Dietitian Nutritionist with experience in community nutrition and outpatient counseling. Her research focuses on the determinants of healthy eating and strategies to improve dietary quality and practices with emphasis on dietary assessment, food access, nutrition and health literacy, intuitive eating, bone health, cardiovacular disease, and health disparities. Some of the current research projects that she is involved includes: 1) Assessing the effects of the COVID-19 pandemic on food security, dietary habits, emotional eating, and other lifestyle behaviors in Bay Area residents; 2) Comparing the dietary quality and health literacy among different generations of Filipino Americans; 3) Exploring the determinants of carbohydrate knowledge and glucose control self-efficacy in Vietnamese women with gestational diabetes; and 4) Evaluating the relationship between motives, nutrition literacy and diet quality of Vegans and Vegetarians.
