Bio

Ashwini Wagle, Ed.D, MS, RD is a Professor and the Chairperson in the Department of Nutrition, Food Science and Packaging at San Jose State University (SJSU). Ashwini Wagle earned her doctoral degree in Educational Leadership (Ed.D) at the University of New England. She comes to San Jose State University with over ten years of experience as a registered dietitian (RD) in several skilled nursing facilities and acute care hospitals in the San Francisco Bay Area. Ashwini Wagle is involved with several on-campus and off-campus organizations and serves on the committees for organizations such as the South Asian Heart Center (SAHC) at El Camino Hospital, Center for Healthy Aging in Multicultural Populations (CHAMP), Rise for Hunger and the Education Council of the California Academy of Nutrition and Dietetics. Her research agenda has focused on food and culture, traditional health beliefs, practices, food behaviors and nutritional implications on health of multicultural populations especially South Asians, food insecurity and hunger. She has published several articles in peer reviewed scientific research journals and has over sixty abstracts published and presented at national, state and local conferences.  She is the author of the book "Carbohydrate Counting: Traditional South Asian Food Lists: For Management and Prevention of Diabetes Mellitus”, a nutrition education tool which has been widely used by hospitals in the United States, UK, Canada, Australia, and Hong Kong.

Ashwini Wagle received the "Excellence in Education" award from the California Academy of Nutrition and Dietetics for 2016-2017. Teaching is a very demanding and challenging profession, but the rewards of success cannot be measured. Ashwini Wagle has devoted the last 21 years of her professional life to SJSU because she believes and supports the mission of this university.

In her personal time, Ashwini Wagle loves to write poetry and cook or you will find her hiking and running.  She has participated in over 100 races including half-marathons, triathlons and relays, and plans to continue hiking in different parts of the world.
